I noticed a trend in the #videogames I enjoy: whether the floor can get dirty, and optionally be cleaned. This ranges from cosmetic trampled grass in The Settlers III (1998), tank tracks in Supreme Commander (2007) and muddy footprints in Graveyard Keeper (2018) to being a mood factor in Theme Hospital (1998), Rimworld (2013) and Project Hospital (2018) to the whole point of the game in Viscera Cleanup Detail (2015). I'm starting to believe this denotes a particular attention to detail I'm apparently sensitive to.

Do you know any others games making use of that niche feature?

Thank you for the suggestion, it looks awesome, I'll definitely watch for its release! As a rule I don't play Early Access games anymore. I've been burned a couple of times where I played games in an unfinished state and lost all interest even after the final version was released. I'm not interested in replaying over and over with incremental changes.

It ruined me Minecraft and RimWorld this way and while I wholeheartedly recommend both games themselves, I can't get myself to play them anymore even though they've been massively improved since I last played them years ago.
Factorio... sort of. The factory you build produces pollution. In addition to other immediate effects, the pollution will eventually kill off the trees leaving the landscape look dead and barren.

Sadly, the unmodded game doesn't allow you to replant the trees or even prevent this mass death from happening. You can only slow it down. But always, the factory wins (unless it doesn't; at which point you must start a new game).
Thank you for the suggestion, I own and tried Factorio but I've been overwhelmed by the amount of planning in advance it seemingly requires. Still would recommend it.
I really enjoyed Thief until the level geometry started to become weird. I understand the appeal of it, but man did it confuse me to the point where I had no idea where I was or how to reach the objective.
