it seems like any kind of binder works with #TVP but it’s crumbly in my hand until i apply heat. i think methyl cellulose will solve that. next ill do smaller batches with different broths. i have a persian recipe i have as a goal.
im working with TVP because beyond meat uses an ingredient my wife is allergic to and I haven’t seen impossible meat available in DC. impossible and beyond uses methyl cellulose so I just need to figure out the flavor.

•Yeah my grandma made us koobideh out of Beyond Meat patties. As long as it’s on the grill and not a pan and tastes pretty authentic.
